I don't know what this............

No Blog today..............!

Well actually no BLOG yesterday. I turned on the computer, went straight to my blog, up came a screen which said SORRY unable to connect - or something like that, can't quite remember what it actually said just remember the SORRY bit! So I called the person who could help, but he made the situation worse - I blame the two day Migraine he was having, but by this time I was getting frustrated! I tried to get on to the blog about three times during the afternoon and evening but to no avail so I gave up hopeing things would change today. It nearly went the same way as yesterday but I was determined not to give in this time! So hopefully todays blog will get posted!

Knitting Circles!


Ever since I could remember and could hold a pair of knitting needles I have always wanted to knit circles - why - I don't know............... I think it was because it was a challenge for me. I found knitting on four needles too much of a challenge, either the needle would fall out of the stitches or it would twist before I managed to even start! A couple of years ago I was told how to knit socks by Jan http://wibbo.typepad.com/wibbos_words on two circular needles and I thought then, I couldn't see why I couldn't knit circles this way...........this afternoon I discovered it could be done! I started with eight stitches and put four on one set of needles and four on the other............and proceeded as if knitting socks but following and circular lace pattern increasing stitches as and when! The only draw back is that stitches may have to be shuffled around, but after speaking to Jan she said change to one long needle. I will have to purchase one tomorrow to finish this project! But I have managed to achieve what I set out to do many moons ago and I am very pleased with myself!

Quick Lunch!


Open Sandwich - Layer in this order
1 Slice of Bread spread with Butter
2 Lettuce Leaves
3 Slices of Cucumber
1 Small Sliced Tomato
Suggested Toppings
Finely Grated Cheese & Boiled Egg & Mayonaise
Tuna & Sweetcorn & Mayonaise
Coronation Chicken
Anything you like really!

Bakewell Tart.........


..................Or Bakewell Pudding as it should be known.


Pastry - 4 ozs (100 grms) Flour, 2 ozs (50 grms) Butter, Water


Rub the butter into the flour till it resembles breadcrumbs, add spoonfuls of water and mix till the flour mixture gathers up. Leave to rest for about 15minutes, then roll out to fit dish (I use the lid of a casserole dish) and cook blind for about 20 minutes 180 degrees, gas 4. Leave to cool for a few minutes then line the bottom with Jam.


Top - weigh two Eggs and then weigh, Butter, Sugar and Ground Almonds to the same weight.


Beat the Butter and Sugar together till pale in colour, beat the eggs then add gradually till all mixed in, fold in the Ground Almonds. Put the Almond mixture on top of the jam Sprinkle a few Flaked Almonds on the top (I didn't have any) and cook again for about 30 to 40 mins 180 degrees Gas 4.


Leave to cool, then enjoy with custard, cream or as it is!
